Cabernet Sauvignon
This a native French variety. It produces a highly colored, tannic red wine. It is known as a vigorous variety, with late bud break and relatively winter hardiness. The berries are dark purple and vines have upright growth. They are known to have uneven yields due to cold/disease. Late ripening, grafted vines can die from crown gall.
They are considered TENDER for our Tennessee Valley winters and are currently NOT recommended for large commercial use in our state. Now, that does not keep us from sourcing these grapes from other locations and blending with our own.
Cynthiana
Also, referred to as "Norton", the very small clusters are dark purple and are known for their average yield and late ripening qualities. They prefer sandy soils and are very HARDY. They are used to produce a Dry Red wine.
These are also thought to be a natural hybrid of Labrusca and Aestivalis, grown commercially in Arkansas and Missouri. It has been called the Cabernet of the Ozarks, and the official state grape of Missouri.

Chardonnay
Very versatile white grape that grows surprisingly well in East TN. The Chardonnay grape itself is very neutral, with many of the flavors commonly associated with the grape being derived from such influences as terroir and oak.[2] It is vinified in many different styles, from the elegant, "flinty" wines of Chablis to rich, buttery Meursaults and New World wines with tropical fruit flavors.
Muscadine
A local favorite, these vines thrive in East Tennessee, with near zero spray control. Muscadine grapes are rich sources of polyphenols and other nutrients studied for their potential health benefits. They are well adapted to their native warm and humid climate; they need fewer chilling hours than better known varieties and they thrive on summer heat.
Fruits, Honey, and Ginseng
We try to use native plantings from East Tennessee. From strawberries to lemons and limes, we also work with produce from all over the World. Some fruit is used for stand alone dessert or Ice Wines. Others are blended with different varieties to build balance and interest. Watermelon-Cabernet infused with local ginseng extract and honey is an example.
